ARLINGTON, Va. — It may be taco Tuesday, but today's eggciting news is that Taco Bamba's owner, Victor Albisu, is bringing his talents to Ballston to open a fast-casual restaurant serving eggs for every meal. Slated for a spring 2020 opening, Huevos will replace Mike Isabella's former restaurant, Yona.
"While eggs are the star, the dishes will be as surprising and craveable as anything from Taco Bamba," Albisu said. "Eggs were never meant just for breakfast."
Expect Albisu's signature Latin twist on the full menu, which is still in development. Think bacon, egg and cheese empanadas or egg salad topped with caviar and served with salt and vinegar chips.
"We will showcase a lot of Latin flavors, but nothing will be off limits," Albisu said. "I believe that a well-cooked egg can be the most memorable part of any dish."
More adventurous diners should opt for the green eggs and jamón, featuring a 63-degree egg, jalapeño whipped potatoes, and crispy ham. The crispy egg roll with scrambled eggs, ground chorizo, poblanos, Monterey jack, chipotle ketchup, and pineapple sweet and sour sauce is sure to be a hit.
Fans of Albisu's now-closed Del Campo will be happy to hear the sweet, souffléed pancakes from the former brunch menu will make a return.
"There is nothing more versatile and delicious than eggs," Albisu said. "I could eat eggs all day, and I do, so the menu possibilities are endless."
Beverage pairings includes coffee -- served "hot, cold, with milk, and black as the night is long" -- and a small menu of craft beers, mimosas and Bloody Marys.
"We aren’t trying to reinvent the wheel and don't want to overstate things, I just like restaurants whose menus are full things you want to eat," Albisu said. "That's what Huevos will be."
Huevos will be located at 4000 Wilson Blvd., Suite C.
