Ingredients
- 4 cups corn kernels (fresh)
- 1 cup diced tomatoes
- 1 cup diced avocado
- 1 cup diced watermelon
- 1/2 oz. cilantro leaves
- 1/2 oz. mint leaves
- 4 tablespoons of extra virgin olive oil
- 1 lime
- salt and pepper
Herbed yogurt dressing
- 1 cup Greek yogurt
- 2 teaspoons garlic
- 4 tablespoons orange juice
- 1/2 oz fresh basil
- salt and pepper
Directions
- In large bowl, mix all ingredients and lightly toss together
- In small increments, incorporate dressing
- Serve and enjoy
