WASHINGTON — Puddin's Chicken 'n Beef Sausage Gumbo
Ingredients:
- roasted chicken
- andouille sausage
- celery
- onions
- green bell pepper
- garlic
- parsley
- tomatoes
- Worcestershire sauce
- hot sauce
- chicken stock
- onion powder
- garlic powder
- paprika
- thyme
- bay leaf
- Puddin's creole seasoning
- sassafras (gumbo file)
- okra
- Guinness stout
- rice
For a more West African influenced gumbo, omit the roux and use more okra to thicken your soup! This is great for people who are gluten-free but want an authentic tasting gumbo.
- 1/2 lb beef andouille sausage
- 1/2 lb roasted chicken, reserve liquid
- 1 1/2 cups finely chopped onions
- 3/4 cup finely chopped green bell peppers
- 3/4 cup finely chopped celery
- 2 tablespoons minced garlic
- One 12-ounce bottle amber beer
- 6 cups shrimp or chicken stock
- 1/4 teaspoon dried thyme
- 2 bay leaves
- 2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons salt
- 1 tsp thyme
- 1/2 teaspoon paprika
- 1 pound medium shrimp, peeled and deveined
- 1 tbsp Puddin's creole seasoning
- 1/4 cup chopped fresh parsley
- 1/2 cup chopped tender green onion tops
- white rice for serving
Throw all of the ingredients in the pot and dine on this tasty gumbo!
