2oz Mayonnaise
2 teaspoons of Old Bay
1 teaspoon of Mustard Powder
1 teaspoon of Salt and Pepper
1oz of dehydrated potato flakes
1 teaspoon of fresh chopped Parsley
Method:
Season Crab Meat with spices. Fold in the mayo with crab meat, spices, and parsley. Add dehydrated potatoes and begin forming crab cakes. Bake in oven for 8 to 10 min.
Crab Aioli
1/2lb Jumbo Lump Crab Meat
1oz Mayo
1Tsp Whole grain Mustard
1Tsp Tobacco
1Tsp Worcestershire Sauce
1Tsp Fresh Chopped Garlic
1Tsp Salt and Pepper
Method:
Season Crab Meat with all and spices. Then proceed to fold in Mayo.
Crab Shallot Cream Sauce
1qt Heavy Cream
8oz Crab Stock
2oz Clam Juice
3oz Sherry
3 Shallots ea.
1 Diced Carrot
1 Diced Celery Stalk
2oz minced Garlic
2oz Old Bay Seasoning
Salt and Pepper to Taste
Method: Sautee all Vegetables, Deglaze with sherry wine, add heavy cream, reduce by half , season to taste with old bay and S&P.
